Why do I keep getting Internal Server Error (500)?

Hi All! It seems I keep getting the following error, seemingly at random in the backoffice.

It seems to happen mainly whilst it is loading new data, the browser console logs an error, but it just says Internal Server Error (500).

There are no real ways to reproduce it as it does not happen all the time.

Does anyone know how I could fix this? Why does this happen?
